Borage microgreens are the first 2 leaves of a young borage plant often referred to as “Star-flowers” for its notably beautiful and edible blue star-shaped flowers when in its mature state. While in the microgreen state we encourage you to eat them while they are young, crunchy, and refreshing!

Harvest

Borage can be cut anywhere just above the rim of the cup and we recommend that you harvest/ eat them within a week of purchase to ensure they do not continue to mature.

Flavor

Borage shoots have a flavor strikingly similar to Cucumber while young!
For best flavor be sure to harvest while young and before the leaves mature, becoming: thin, soft, fuzzy, and bitter, rather than crisp and refreshing.
