Pea Shoots

Pea shoots are a young "pea" plant meant to be eaten while the leaves and stalks are young & tender; they can be eaten raw, or in some cultures lightly sautéed.

Nutrients

Pea Shoots are a good source of...

  • Vitamin C

  • Vitamin K

  • Vitamin A

  • Calcium

  • Protein

  • Iron

  • Fiber

Harvest

Pea shoots can be cut anywhere just above the rim of the cup. For the tall variety it is up to personal preference: select one shoot and cut it just above the rim; next, starting at the top, take small bites working your way down to the cut end and pay attention to the flavor & crispness as you go. If along the way you notice a change in flavor or tenderness that is no longer to your liking, take note and harvest your remaining shoots at that height.

Flavor

Pea Shoots taste like their mature counter part, adding the flavor of a freshly picked, pea pod to whatever dish you add them to.
